Spinach Salad with Apples and Maple-Cider Vinaigrette
Ingredients:
1 package (10-oz.) baby spinach
1 Red Delicious apple, cored and thinly sliced
1 small red onion, thinly sliced
4 ounces crumbled feta cheese
1/3 cup cider vinegar
2 tablespoons pure maple syrup
1 tablespoon Dijon mustard
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2/3 cup olive oil
Preparation:
Remove the stems from the spinach and wash toughly, using a salad spinner, spin the spinach leaves to remove the excess water and set aside.
Prepare Vinaigrette:
In a glass mixing bowl whisk together cider vinegar, maple syrup, Dijon mustard, kosher salt, freshly ground black pepper and olive oil. Gradually whisk in oil until well blended.
Prepare Salad:
In a large bowl combine spinach, apples, red onion and feta cheese in a bowl. Drizzle with desired amount of maple-cider vinaigrette; toss to coat.
Plate the salad and sprinkle with candied pecans if desired.
