Egg and Avocado in the Hole
Yields: 2 Servings
Ingredients:
- 2 slices of sourdough bread
- 2 large eggs
- 1/4 of an avocado
- 1 tablespoon butter
- 1/4 cup grated cheddar cheese
- Sea salt, to taste
- Freshly ground black pepper
Preparation:
Turn your oven on to a high broil.
Slice the avocado in the middle to remove the seed. Then slice 1/4 inch thick slice from each half.
Cut a whole in the bread big enough to fit the avocado slice and butter the edges of the bread on both sides of the bread.
Heat ovenproof skillet over medium high heat. Add the bread to the skillet and place the avocado slice in the pre-cut hole.
Crack an egg into the center of the avocado. Season with a little sea salt and freshly ground black pepper.
Reduce heat to medium and cook until the bottom of the bread is nicely browned. Carefully flip to the other side and cook for 2 minutes more, until browned.
Sprinkle 2 tablespoons of cheese over each piece of toast.
Place the skillet in the oven to broil for 1-2 minutes, or until cheese is melted.
