21 Day Fix Whole Grain Spaghetti with Hot Italian Sausage, Goat Cheese, Peppers and Onions
Portion Control Containers : 1 Red, 1/2 Green, 2 Yellow, 1/2 Blue, 1 Teaspoon (oil)
Yields: 4 Servings
Ingredients:
- 1/2 box of whole grain spaghetti
- 4 teaspoons extra-virgin olive oil, divided, plus more for garnish
- 1 pound hot Italian sausage
- 1/2 cup onions, thinly sliced
- 1 cup bell peppers (red, yellow, green), cored and thinly sliced
- Sea salt, to taste (optional)
- 2 cloves garlic, minced
- 6 ounces goat cheese, at room temperature
Preparation:
In a large skillet over medium-high heat and cook sausage, breaking up pieces with a wooden spoon, until browned and cooked through. Place on a paper-towel-lined plate.
Add 2 teaspoons extra-virgin olive oil to pan and cook onions and peppers until softened and starting to brown, about 8 minutes.
Season with sea salt, to taste (optional). Add garlic and cook 1 minute longer, stirring frequently.
Meanwhile, bring a large pot of water to a boil. Cook pasta until “al dente” according to package directions, drain, and reserve 1/2 cup cooking liquid.
Place 1/4 cup cooking liquid in a large bowl and add goat cheese, whisking to combine.
Return pasta to pot along with goat cheese mixture, sausage, and pepper mixture. Over low heat, toss to thoroughly combine and add reserved 1/4 cup pasta cooking liquid, if necessary, so that sauce is smooth and creamy.
Serve 1 cup of pasta mixture and drizzle with a splash of extra-virgin olive oil.
