21 Day Fix Slow-Cooker Honey Sesame Chicken

Portion Control Containers : 1 red, 1 orange (add 1 yellow if you serve it over brown rice)

Yield: 4 Servings

Ingredients:

  • 1 pound boneless, skinless chicken thighs
  • 1/2 cup raw honey, melted
  • 1/4 cup low-sodium soy sauce
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons minced dried onion
  • 1 garlic clove, minced
  • 1/4 cup barbecue sauce
  • 1/2 teaspoon crushed red pepper flakes
  • 3 tablespoon cold water
  • 1 tablespoon cornstarch
  • Toasted sesame seeds
  • 1/4 cup chives, chopped

Preparation:

Cut chicken into 1-inch cubes and place in slow cooker.

In a small bowl, mix together honey, soy sauce, sesame oil, garlic, dried onion, barbecue sauce, and red pepper flakes.

Pour the sauce mixture over the chicken and stir to coat. Cook on low for 8 hours.

During the last hour of cooking, mix together the water and cornstarch and stir into the slow cooker with the chicken/sauce. This will allow the sauce to thicken as it cooks.

Serve chicken and sauce over hot rice and top with toasted sesame seeds and chives.
