21 Day Fix Chicken and Mushroom Marsala

21 Day Fix Chicken and Mushroom Marsala 21 Day Fix Recipe

Portion Control Containers : 1 Red, 1 Yellow, 1/2 Green, 1 Blue

Yields: 2 Servings

Ingredients:

  • 8 ounces Boneless, skinless, chicken breasts, cut into bite size pieces
  • 1/2 cup white onion, sliced
  • 1/2 cup sliced baby Bella mushrooms, slices
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried herbs blend (Parsley, French Tarragon, Chervil & Chives)
  • 1 teaspoon of Coconut Oil
  • 1/4 cup of balsamic vinegar
  • 1/4 cup of Marsala cooking wine

Preparation:

In a skillet, heat coconut oil over medium heat and add onions and cook until fragrant, about 2 minutes.

Add mushrooms to pan and cook about 2 minutes.

Season the chicken with freshly ground black pepper and add the chicken to the skillet and cook about 3 minutes until no longer pink.

Add Marsala wine, balsamic vinegar, and dried herb blend; turn the heat up to medium-high. Bring to a simmer and let simmer for 10-15 minutes.

Plate 1/2 cup of pasta in the center of the plate, then add 4 ounces of chicken (3/4 cup), 1/2 cup of mushrooms and onions over the pasta and top with 1/4 cup of Parmesan cheese.
